Chicken Fried Steak Fingers | Delish

1 1/2 lb. cube steak
1 c. all-purpose flour
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. paprika
1/2 tsp. cayenne pepper
kosher salt
Freshly ground black pepper
3/4 c. whole milk
2 large eggs, beaten
Vegetable oil, for frying
4 tbsp. butter
3 tbsp. all-purpose flour
1 1/4 c. whole milk
1 tbsp. finely chopped chives
kosher salt
Freshly ground black pepper


1. Slice steak into thin long strips about 1/2” thick. Set aside.

2. Set up a dredging station: In a shallow bowl, combine flour, garlic powder, onion powder, paprika and cayenne, and season with salt and pepper. In a second shallow bowl, whisk together milk and eggs. Season steak with salt and pepper. Working in batches, dredge the steak strips thoroughly in the flour mixture then add them to the egg mixture and turn the pieces to coat. Return steak to the flour and dredge once more.

3. In a Dutch oven or large deep skillet, add about 1” of vegetable oil and heat over medium heat. When the oil is shimmering (it should be about 350°), place the steak strips, one by one, into the oil with tongs. Cook until golden all over, about 2 minutes per side. Place them on a plate lined with paper towels to drain off any excess grease.

4. Make gravy: In a small skillet over medium heat, melt butter. When the butter is foamy, whisk in flour and cook mixture until the flour is golden, about 1 minute. Gradually whisk in milk and bring mixture to a boil. Reduce heat to gently simmer the gravy until thickened. Stir in chives and season with salt and pepper to taste.

5. Serve the chicken fried steak “fries” warm with gravy for dipping.

How to make Country chicken fried steak

Learn how to make southern country chicken fried steak at home. This is a staple of the south, and you can recreate this famous dish. Tender beef steak is battered and fried just like fried chicken.

Here is the recipe
2 cups of flour
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon onion powder
2 cups buttermilk
1 1/2 pounds thin (1/4 inch thick) cut beef (sirloin, lean chuck steak, or other mostly lean meat)
2 packages Pioneer Gravy Mix (or see the recipe for gravy)
2 tablespoons butter
2 1/2 tablespoons flour
1 3/4 cup whole milk
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Prepare seasoned flour by combining flour, salt, ground black pepper, garlic powder, paprika, onion powder. Stir until well combined. Place seasoned flour in a large shallow container. Pour buttermilk in a shallow dish. Batter steak by dusting with seasoned flour. Shake off the excess, then dip into the buttermilk. Shake off excess buttermilk and then place back into the flour. Coat well with flour and then shake off. Place battered steak on a wire rack on a baking sheet. (this will help the crust dry out a bit, and result in better crust). Complete the with the remaining pieces of meat.

Add about 3 inches of oil into a skillet. Heat skillet until the oil gets to about 350 degrees. Place meat one or two pieces at a time in the oil, and cook the meat. Do not touch the meat until the top of it looks like it is beginning to cook and brown. Turning the meat too early will mean the crust may fall off. This may take about 7 to 8 minutes for the first side, and about 3 to 4 minute for the remaining side. Remove from oil and drain.

You may want to use the Pioneer gravy mix. If not, please see the gravy mix below. Since this gravy is traditionally white, we are not using any beef drippings.

In a small pot add 2 tablespoons of butter over medium heat. When the butter melts completely add the flour. Cook the flour for about 1 minute. Add 1 3/4 cup of whole milk. Stir until the mixture thickens. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
